Chicken Soup / Red Cabbage Salad
Today is the 24th day of Ramadan. If you still don’t know what to prepare for iftar, here are two delicious and easy recipes. Enjoy!
Chicken Soup
Ingredients:
- 3 tbsp olive oil
- 1 onion
- 6 cups chicken broth
- ½ cup rice
- 2 tbsp yogurt
- 1 tsp flour
- 1 egg yolk
- Juice and zest of ½ lemon
- 1 chicken fillet (shredded)
- 2 tsp salt
- 1 tsp black pepper
- ½ bunch cilantro
Preparation:
- Dice the onion and sauté in olive oil.
- Add chicken broth and rice, bring to a boil.
- In a separate bowl, whisk yogurt, flour, egg yolk, and lemon juice.
- Add a ladle of hot soup into the mixture, stir, then slowly pour back into the pot while stirring constantly.
- Add shredded chicken, then season with salt, pepper, lemon zest, and chopped cilantro. Simmer briefly and serve hot.
Red Cabbage Salad
Ingredients:
- 150–160 g red cabbage (¼ head)
- 1 tsp salt
- 1 carrot
- 1 clove garlic
- 1 tbsp apple cider vinegar
- 1 tbsp mayonnaise
- 1 tbsp olive oil
- 3 tbsp yogurt
Preparation:
- Thinly slice the cabbage, add salt, knead gently, and let sit for 5 minutes.
- Grate the carrot and garlic on top, add vinegar, mayonnaise, and olive oil.
- Add yogurt and mix everything well.
- Serve immediately. Optionally, drizzle with olive oil and garnish with cilantro.
