Delicious Preparations for Winter
For those who prefer natural, homemade products during the winter season, summertime preparations are extremely useful.
Jams, compotes, pickles, and sauces made from fresh fruits and vegetables add color and flavor to your table during the cold months.
Here are some easy and delicious winter recipes you can make right at home:
Pickled Cucumbers
Ingredients:
1 kg cucumbers, 2 tablespoons salt, 2–3 garlic cloves, 1 bunch dill, 1 liter water
Preparation:
- Wash the cucumbers and place them in a jar.
- Add garlic and dill.
- Prepare the brine by dissolving salt in water and pour it into the jar.
- Seal the lid and store in a cool place for 7–10 days.
Tomato Sauce
Ingredients:
2 kg tomatoes, 2 onions, 1 garlic bulb, 200 ml vegetable oil, 2 teaspoons salt, 1 teaspoon sugar, black pepper, basil (to taste)
Preparation:
- Blanch the tomatoes in hot water, peel them, and blend into a puree.
- Chop the onions and garlic, then sauté them in oil.
- Add the tomato puree and cook for 30–40 minutes.
- Add the spices and mix well.
- Pour the sauce into jars and seal tightly.
Cornelian Cherry Jam
Ingredients:
1 kg cornelian cherries (dogwood), 1 kg sugar, 1 glass (cup) of water
Preparation:
- Wash and clean the cornelian cherries thoroughly.
- Pour 1 glass of water into a pot, add the sugar and stir until fully dissolved over medium heat.
- Add the cherries to the syrup and cook for 25–30 minutes, stirring occasionally to prevent sticking.
- Once the jam thickens, remove from heat.
- Fill into sterilized jars while hot, seal tightly, and turn the jars upside down to cool at room temperature.
