Pumpkin Soup / Fava
Make your iftar healthy this Ramadan!
Today is the 17th day of Ramadan. Here are two delicious dishes you can prepare for iftar: Pumpkin Soup and Fava. Enjoy!
Pumpkin Soup
Ingredients:
- 500 g pumpkin
- 300 g potato
- 1 onion
- 30 g butter
- Salt to taste
- Black pepper to taste
- Nutmeg to taste
Preparation:
- Clean the pumpkin from skin and seeds, wash in cold water, and dice. Peel and dice the potatoes in the same way. Place potatoes and pumpkin in a pot, cover with cold water, and put on the stove.
- Finely chop the onion, sauté in butter until translucent, then add to the pot with the pumpkin and potatoes. Cook uncovered over medium heat for about 20 minutes.
- After 20 minutes, blend the vegetables into a purée. Add salt and pepper, cook for another 5–7 minutes.
- When serving, you may add spices, lemon juice, or olive oil to taste.
Fava
Ingredients:
- 1.5 cups dried broad beans
- 1 onion
- 4–5 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- 3 cups hot water
- 1 red onion
- ½ bunch dill
Preparation:
- Chop the onion, sauté in plenty of olive oil. Wash the beans well, drain.
- Add the beans to the sautéed onions, cook briefly, then season with salt and sugar. Add hot water and cook over medium heat until the beans soften, stirring occasionally.
- If the water evaporates before the beans are fully cooked, add more boiling water to prevent burning. Once soft, mash with a spoon or purée with a hand blender.
- When serving, garnish with chopped dill and sliced red onion.
