Mushroom soup/ Shahriya salad

Here are 2 delicious recipes with useful ingredients that you can prepare for iftar.

Mushroom soup
Ingredients:

• 1 onion;
• 500 g of mushrooms;
• 3 potatoes;
• greens (dill, parsley, green onions);
• 3 tablespoons butter;
• 2 tablespoons vegetable oil;
• 3 tablespoons flour;
• 500 ml of chicken broth;
• 1 liter of boiling water;
• salt and pepper to taste;
• 200 ml of milk;
• 1 clove garlic.

How to prepare:

First, chop the onion finely. Peel a squash, grate it and cut it into small cubes. Cut the mushrooms into half rings. Pour butter and vegetable oil into the pot and fry the onion in oil until golden brown. Add the mushrooms to the onion and mix. When you add the mushroom juice, add flour and mix quickly. Then add chicken broth, water and potatoes and cook. When the soup starts to boil, add salt and pepper. Close the lid and simmer for half an hour. Add milk to the boiling soup and boil for another 15 minutes. Finally, add the grated garlic and finely chopped greens, mix and remove from the heat. You can serve the finished soup hot.

Shahriya salad

Ingredients:

• 2 cups barley soup;
• 2.5 glasses of water;
• 2 tablespoons vegetable oil;
• 1 piece of roasted red pepper acid;
• 5 pieces of cucumber acid;
• 3 tablespoons canned corn;
• 2 tablespoons chopped dill;
• 1 green onion;
• 1.5 lemons;
• 1 tablespoon of wine;
• 1 teaspoon of salt;
• 1 teaspoon pepper;
• 2 tablespoons olive oil.

Add vegetable oil to the heated pan and fry the barley slices in the pan. It will be enough to fry for 2 or 5 minutes to taste.
Then add hot water and mix well. If you don't mix, the cones can stick. Cover and wait for the water to drain, then turn off the bottom by covering the lid to allow the water to evaporate.
Cut cucumber pickle and red pepper into cubes and place in a large bowl. Add finely chopped green onions, dill and canned corn. Add the mixture to the pan in the pan. Add salt, pepper, lemon juice, pomegranate wine and olive oil and mix well. Your salad is ready.
